Scones



Ingredients:
3 1/2 cups all-purpose flour
1/2 cup whole wheat flour (I used white whole wheat flour)
2 tablespoons baking powder
1/2 teaspoon salt
6 tablespoons butter (you really only need 4 tablespoons, but 6 tastes more buttery and scone-like)
1 cup plain yogurt
1/2 cup plus 1 tablespoon milk
1 tablespoon honey
4 tablespoons granulated sugar


1. Preheat oven to 425 degrees F.
2. Mix flour, baking powder, salt, and 3 tablespoons sugar in a large bowl.
3. Cut butter into dry mixture.
4. Mix yogurt and 1/2 cup milk together in a small bowl until combined.
5. Make a hole in the center of the dry mixture and pour the yogurt-milk mixture in. Mix with a wooden spoon (or fork, I love my wooden fork) until the dough sticks together in a ballish form.
6. Very lightly flour a baking sheet and put the dough on top of it. Push it down until it is about 1 1/2 inches high and any shape (it doesn't matter).
7. Use a metal measuring cup or other similar circular shape to cut circles in the dough. Arrange them on the sheet very close to each other.
8. Put honey in a small bowl or mug and microwave for 10 seconds.
9. Pour the tablespoon of milk into the bowl or mug and stir.
10. Brush honey-milk mixture on the tops of the scones. Sprinkle the last tablespoon of sugar evenly over the scone tops.
11. Bake 13-15 minutes, until the scones are golden brown on top. Serve warm. These are especially delicious with jam and clotted cream. And a mug of Irish breakfast tea.
