Green Chile Stew

This recipe is from my mother, who lived in New Mexico from some time and became very well acquainted with New Mexican food.

Ingredients:
1 large onion, sliced
1 head garlic, halved
12 green chiles
1-2 cans/jars green enchilada or desert pepper salsa
1 large can chicken broth
salt
1 lb. cooked pork (roasted or grilled)
Olive oil


1. Heat oven to 400 degrees F. Place onion slabs/slices and garlic halves on a cookie sheet and sprinkle with a little olive oil and salt. Roast for about 25 minutes, or until tender.

2. Blend onion and garlic in a food processer.

3. Heat grill to high. Grill chiles skin side down for about 10 minutes, until they look charred. Place them in a bowl with a lid or plastic wrap and allow to steam for about 15 minutes.

4. Cut off chile stems. Cut lengthwise and remove seeds and membrane. Chop.

5. Chop pork into small pieces.

6. Pour broth and sauce/salsa into a large pot. Add other ingredients. Season with salt to your liking.

7. Simmer about 1 hour.

8. Serve stew anyway you like! It is delicious with homemade tortillas and grated cheddar or colby jack cheese.
