Chicken and Goat Cheese on French Bread
Ingredients:
Grilled chicken
Goat cheese
French Bread
Fresh parsley
1. Cut off a piece of French bread about 5 inches long. Slice it open to make two open-facing pieces of bread.
2. Optional: Warm up the French bread by drizzling a little olive oil and sprinkling salt and pepper over it and sticking it in the oven for a few minutes (300 degrees F), until it's crunchy and warm enough for you.
3. Cut two pieces of grilled chicken to fit the bread and place them on top of bread.
4. Crumble goat cheese (amount to your liking) over chicken.
5. Microwave: Place open-face sandwich on a plate and warm in microwave for 30 seconds.
Oven: Heat to 250 degrees F and warm on a cookie sheet until it is warm to your taste.
6. Place a couple of sprigs of parsley on those suckers and WOLF 'EM DOWN!
(Just kidding make sure they aren't too hot. Mine were. My French bread was so chewy that I was stuck there, trying to bite off a scorching hot mouthful of sandwich for a good 20 seconds. Ouch.)
