BBQ Chicken Pizza


BBQ Chicken Pizza (Makes 2 Pizzas)

Ingredients:

  • 1 whole Recipe For Pizza Crust (this one makes two crusts)
  • 4 whole Boneless, Skinless Chicken Breasts
  • 1/2 cup Barbecue Sauce
  • Olive Oil
  • Salt For Sprinkling
  • 16 ounce sFresh Mozzarella Cheese, Sliced Thinly (grated/shredded mozzarella cheese will work, too)
  • 1/2 whole Red Onion, halved and sliced thinly
  • Chopped Cilantro, to taste

Preparation Instructions

1. Preheat oven to 375 degrees.
2. Salt chicken breasts on both sides, then place in an ovenproof dish. Pour BBQ sauce over the breasts and turn them over to coat. Bake for 20 to 25 minutes, or until chicken is done. Remove from oven and dice. Set aside.
3. Increase oven temperature to 475 degrees.
4. Roll/stretch out pizza crusts. Lay them on sheet pans drizzled with olive oil. Drizzle some olive oil on dough. Sprinkle salt over dough.
5. Spoon some extra BBQ sauce on the crusts and spread it around evenly. Top sauce with sliced mozzarella. Sprinkle on half the diced chicken and thinly sliced red onion on each crust.
6. Sprinkle with a little salt. Bake for 15 to 17 minutes, or until crust is golden brown and cheese looks golden on the edges and melty.
7. Remove from the oven and sprinkle on plenty of chopped cilantro. Cut into squares and serve immediately.
